Want an easy green vegetable to add to your meals? These roasted Brussels Sprouts are a winner!

Ingredients:

Brussels Sprouts
olive oil
salt
pepper
lemon

 

Method:

Preheat the oven to 180C.

Place a sheet of baking paper on an oven tray.

To cook the amount needed for a meal, use a good handful per person. To prepare the Brussels Sprouts, trim the bottom off each, remove the tough outer leaves and cut in half lengthways if small or in quarters if large.

Place the Brussels Sprouts on the baking tray and drizzle with olive oil.

Roast until tender, about 20 – 30 minutes, tossing occasionally. The outer leaves may darken and go crisp – these are the ones everyone will be fighting for, as they taste just like kale chips!

Transfer the cooked Brussels Sprouts to a serving dish. They can be eaten plain, seasoned with a little salt and pepper or a squeeze of lemon.
